Mango, Avocado & Blueberry Salad | A Mindful Meal Begins Before the First Bite

Sometimes the healthiest thing we can do is slow down.

We live in a world where meals are often rushed. We eat while answering messages, watching television or thinking about the next thing on our to-do list.

Today, I chose something different.

Before I prepared this colourful salad, I paused.

Not because I had extra time.

But because I wanted to be present.

Beginning With Intention

Before adding the ingredients to the bowl, I arranged fresh blueberries into a pattern inspired by the Cho Ku Rei symbol.

For me, this isn’t about perfection.

It’s a quiet reminder to prepare food with love, gratitude and care.

I believe the way we prepare a meal can be just as important as the meal itself.

So before the first slice of mango…

Before the avocado…

Before the spinach…

I simply paused to appreciate the food in front of me.

Colour Is Nature’s Invitation

This salad is full of fresh ingredients that bring colour, texture and flavour together.

I used:

  • Fresh mango
  • Avocado
  • Cucumber
  • Baby spinach
  • Blueberries
  • Fresh mint
  • Chia seeds
  • Extra virgin olive oil

Every ingredient adds something different.

Sweetness.

Freshness.

Creaminess.

Crunch.

Together they create a light, refreshing meal that’s perfect for lunch or as a side dish.

Healthy Eating Doesn’t Mean Giving Up Everything You Love

One thing I always want to be honest about is this:

Healthy living isn’t about being perfect.

I still enjoy pizza.

I still enjoy McDonald’s.

I still enjoy KFC and Burger King from time to time.

For me, it’s about balance.

Most days I choose foods that help me feel energised, but I also believe life is meant to be enjoyed.

There’s room for both.
